I’ve written before about my love of baguettes. There is nothing like a fresh made baguette sitting on your counter waiting to be ripped into. Now if you’re me you don’t need any excuse to get rid of them but here are some creative ways to use up any baguette you’ve managed to put aside.
Breakfast: Baguette with simple lemon curd
This easy breakfast pairs toasted baguette with an easy to put together lemon curd. This curd is delicious slathered on toast, as done here, on pancakes or baked into the middle of muffins.
Simple lemon curd recipe:
- 1 cup sugar
- 1 cup lemon juice
- 1 tbsp lemon zest
- 3/4 cup butter
- 4 whole eggs + 1 yolk, whisked together
In a saucepan over medium heat combine sugar, lemon juice, lemon zest and butter. Once the butter is fully melted and the ingredients are combine turn the burner down to low. Remove the pan from the heat and whisk in the eggs. This helps to avoid turning your lemon curd into lemon scrambled eggs. Now return the pan to low heat and stir with a wooden spoon until thick. Pour the lemon curd through a strainer to remove any zest. This curd can be kept in the fridge for up to a week.
Lunch: Avocado, tomato and basil
Toasted baguette is topped with smashed avocado, fresh tomato and salt and pepper. Basil from our garden topped this delicious light lunch.
